The scones are great to eat for up to 3 days if you are storing them at room temperature in an airtight container. Or you can put it in a freezer - that way it will stay fresh for up to 1 month.
Make sure your coconut oil is soft but not liquid. That way, you'll achieve the best dough texture consistency.

  2. 2. Prepare the flax egg by combining the water and flaxseed meal in a mixing bowl, then pour in the almond milk.

  4. 4. Add the vanilla extract, melted coconut oil, the juice and shredded zest of one lemon and the egg from step 2. Mix until all the ingredients are perfectly combined.
