Where’d this idea come from? Well, as I was talking with one of my super mom friends, trying to find out how she does what she does, we ended up talking about how much her family loves camping. It was January and she had all of her camping trips planned and booked out for the full summer already! My mouth dropped and I think I sat there stunned and in awe for a minute then explained how camping trips typically work out for me. Ha! Ha! Basically, I don’t have anything planned, I just know that I want to go camping! And with not planning, Wednesday in the summer comes around and my husband says, hey, we don’t have any sports this weekend, let’s go camping!

Now, I love camping actually…like really love it. But figuring out a camping menu, shopping and basically getting everything prepared for camping causes me a LOT of anxiety. And there have been times that I’ve actually had to say, “Sorry, but No!” Not enough time to get prepared!

She prepares by making ahead and freezing all her summer camping food in advance!!! She makes ahead and freezes foil packet recipes for oven, grill or campfire cooking including things like desserts, breakfast burritos and foil dinners!

Just made these and looking forward to ease of grab and grill. Not difficult to make but can you clarify, does each recipe make 6 meals? Is each foil pack a meal for 1? Each packet seems quite generous for 1 so I just want to understand how to follow. Directions say 6 sheets of foil, dividing all evenly so 6 packets per recipe. Pre-prep says 2 gallon bags per recipe so is that 3 foil packs per bag? Mine came out quite large so each would definitely feed 2 people.

I’m rent camping soon, wondering if they need to be frozen or if foil packs can be stored in cooler and for how long?

I usually freeze mine in advance and they slowly thaw in the cooler. It depends also on which day you plan to cook them. They do better thawed when cooking.

I’m not familiar with canned potatoes, can you use regular potatoes?

I use tater tots but I bet small golden or red potatoes would probably work too.

I wish I would’ve gotten your newsletter a week ago as we’re going “camping” this weekend. I’ve printed out the recipes and am going to try them! I normally make grill packs with just vegetables, but meat and vegetables sounds even better!
